Abstract

Millet represents an important group of grasses with a huge impact on worldwide health because of their nutritional properties and evidence-based therapeutical activities, such as antioxidant, antidiabetic, and antineoplastic, among others. Phenolic compounds are known to exhibit a range of chemical structures and biological activities that make their production, storage, and consumption part of the daily basic diet in many parts of the world, especially in the Old World. In recent decades, the importance of polyphenols as an important source of phytopharmaceuticals, nutraceuticals, and dietary supplements for health enhancement created the necessity of technological development for extraction, preservation, and quality control for meals that contain higher amounts of these compounds, and it is notable the development of the “superfood and whole food fashion” which includes certain grains and vegetables, such as millet grains. This chapter explores the beneficial properties of many of the millet species, the diversity of their polyphenol content, postharvest and extraction procedures, and quantification and quality assessment for their human consumption.
