Abstract

Soybean ( Glycine max L.) is an important crop grown all over the world for its high protein and oil content with different industrial, food, and animal feed. The large amount of by-products of soybean processing, such as soybean molasses, okara, soya whey, hulls, etc., are frequently disposed of improperly, resulting in pollution of groundwater and air. The present chapter highlights the valorization of soybean by-products, which would benefit the sustainable application of soybean waste and cause zero waste. Additionally, soy by-products are increasingly used for biofuels, bioplastics, nutraceuticals, and this will accomplish global sustainability objectives of reducing fossil fuels and cutting back on greenhouse gas emissions. Valorization of soybean by-products can be done using physical, chemical, biological, and combined methods. The benefits of using these by-products in various industries go beyond the environmental hazards. Through cost-effective valorization of soybean by-products, agribusinesses and the industry sector would flourish, which would eventually aid food security and conservation of the environment.
