Comparative Phytochemical Profiles of Game Birds and Ruminants Assessed by Targeted Metabolomics
Abstract
Objectives: Interest in wild game meat is increasing because of its perceived nutritional value and the access of wild animals to botanically diverse diets. We aimed to characterize phytochemical profiles in edible tissues from wild game birds and ruminants and evaluate differences by species, tissue type, digestive physiology, and geographic origin.
