The biologically active substances component composition of grape stems extracts
Abstract
The study presents the results of identification of mass concentrations of biologically active substances with a phenolic structure in one of the most widespread types of waste from the viticulture and wine industry - grape stems. In the prepared experimental extracts of grape stems, the qualitative and quantitative composition of monomeric and polymeric forms of phenolic substances was established. The analysis of the qualitative indicators of the phenolic composition of the experimental samples of grape stems showed that the greatest quantitative characteristics of hydroxybenzoic acids are characterized by gallic acid, catechins (flavan-3-ols) - (+)-D-catechin, and stilbene substances - trans-resveratrol, which have antioxidant, anti-cancer and other biologically valuable properties. Conclusions have been drawn about the prospects of using a product from the processing of grape stems - a polyphenolic concentrate of grape stems - to obtain products with preventive and immunomodulatory effects.
