Abstract

Spray drying of materials rich in sugars is challenging due to stickiness, often requiring high carrier levels like maltodextrin (>50%), which dilutes ingredients and increases cost. This study demonstrates that Whey Protein Isolate (WPI) is a far more efficient carrier, allowing production of powders with cleaner labels. A honey model solution was dried using a Büchi B-290 dryer. Compared to a conventional 1:2 solute-to-maltodextrin ratio, a 6:3 solute-to-WPI ratio successfully produced powder, reducing carrier usage three to fourfold. FTIR and GC-MS analyses confirmed the absence of thermal degradation, preserving product quality.
