Unraveling the key chemical components transformation and aroma formation mechanisms during tobacco curing-drying process: A comprehensive review
Abstract
STobacco, as a vital cash crop, plays a significant role in global agricultural economy and international trade. The quality of tobacco products is closely associated with their chemical composition, and the curing-drying process represents a critical stage that profoundly influences the aroma, overall quality, and economic value of tobacco leaves. Leaf drying and color change are the most easily observable external changes during the curing-drying process, and are concomitantly accompanied by the transformation of key chemical components as well as the formation and accumulation of aroma compounds. The current work provides a systematic review of current research on the evolution of key chemical components and the mechanisms underlying aroma formation during curing-drying. These insights offer a theoretical foundation for technological innovation and quality enhancement in the tobacco industry.
