Abstract

As consumers increasingly seek healthier dietary options, the demand for reduced-fat products is on the rise. These products aim to provide the same taste, aroma, and texture as their full-fat counterparts while offering lower fat content, which appeals to health-conscious individuals. Additionally, for producers, reducing the fat content can lower production costs by using less expensive ingredients. Reducing fat in chocolate formulations poses significant challenges, such as maintaining its flow characteristics during processing, maintaining stability at room temperature, and delivering a smooth, creamy texture that melts pleasantly in the mouth. Advanced techniques to reduce fat content without compromising texture, taste, aroma, and mouthfeel address these challenges. Various approaches have been reported for optimizing reduced-fat chocolates including optimization of particle properties, optimization of emulsifier level and blends, and using alternative ingredients. These alternatives encompass defatted cocoa powder, stabilizer-emulsifier blend, and fat replacers including fat substitutes and fat mimetics such as hydrocolloids. One promising strategy may involve combining multiple techniques to offset the challenges associated with fat reduction. This article is a comprehensive review to present the application and properties of each of the mentioned techniques in reduced-fat/calorie chocolate production and the effects of reformulated chocolate on technological aspects.
