Abstract

Meat products are highly susceptible to microbial contamination and quality deterioration, requiring integrated safety control strategies. Nanozymes exhibit outstanding stability, tunable catalysis, and strong matrix adaptability for food applications. Unlike existing reviews focusing on material design or isolated functions, this review first proposes a full-chain integrated framework: “risk identification–mitigation intervention–real-time monitoring–smart packaging” for complex meat systems. We clearly define integrated nanozyme-enabled platforms that modularly integrate detection, antimicrobial action, spoilage monitoring, and smart packaging throughout the meat supply chain, and clarify their difference from single-nanozyme “all-in-one” materials. The catalytic mechanisms of antibacterial and sensing performance are discussed, and advances in nanozyme-based smart packaging are summarized. Challenges involving selectivity, stability, safety evaluation, and practical implementation are outlined. By systematically organizing the modular functional integration of microbial control, spoilage monitoring, and smart packaging within meat systems, this review provides a structured framework for evaluating the practical readiness and future potential of nanozyme-enabled platforms in meat quality assurance and intelligent packaging.
