Abstract

Why does surimi sound like such an authentic word? There is a secret underbelly to fish markets—not everything is as it seems. I mean, fish fingers aren’t really fingers. Fish sticks aren’t really sticks. And though crab legs are a thing, I wouldn’t recommend crab cakes for dessert, though I suppose they could suffice for a birthday party if need be. But seriously, there is cod, but is that Atlantic cod, or Pacific cod? But definitely not lingcod, as they’re not even cousins. Which should not be confused with scrod, which are baby cod, I think. And there are all kinds of hakes, including whiting. But to be clear, whiting isn’t exactly whitefish. Of which there are a lot. Both freshwater and marine. Including cod. Besides whitefish, we have redfish, which can be many types of fish species, but really is inclusive of many fish species, even some rockfish. Which can also hit the market as whitefish.
