Abstract

Enzyme-assisted extraction (EAE) has emerged as a promising technology for isolating bioactive compounds from natural sources. Unlike traditional methods, EAE employs enzymes to gently disrupt cellular structures, releasing target compounds without harsh conditions or chemical solvents. This approach offers significant advantages in various industries, including food, pharmaceuticals, nutraceuticals, and cosmetics. This chapter provides a comprehensive overview of EAE techniques, covering their principles, operational aspects, processes, factors influencing enzyme selection, extraction parameters, and applications. We explore the role of EAE in enhancing enzyme activity and the extraction of bioactive substances. Key factors influencing EAE efficiency, as well as compatibility with substrates and processing conditions, are discussed. Additionally, the chapter explores potential future developments and emerging fields in EAE, including the integration of bioprocess engineering, omics technologies, and computational modelling. By providing a thorough analysis of EAE, this chapter aims to highlight its significant contribution to innovation and sustainability in the production of bioactive compounds.
