Abstract

Pressurised liquid extraction (PLE) is an environmentally sustainable technology that removes bioactive components from food and plant sources. PLE is a unique automated technology involving exalted pressure and temperature to extract solid matrices. The specific temperature and pressure alter the solvent’s physicochemical characteristics, facilitating effortless and profound perforation into the matrix intended for extraction. This innovative technology improves the sample output, diminishes the solvent consumption, yields reduced waste volumes, and concurrently minimizes the cost and duration compared to conventional extraction techniques. This chapter delves into the basic extraction principle, instrumentation, encompassing pressurized hot water extraction, and explores the factors vital for maximizing extraction efficiency. The discourse highlights the implementation of various solvent blends and supplementary extraction additives that augment extraction efficiency. The chapter also deals with implementing PLE to enrich the isolation of different bioactive compounds from food, including phenolics, carotenoids, essential oils, and other dietary supplements. PLE is poised for significant expansion in the foreseeable future in terms of its advancements, positioning itself on larger scales as a viable substitute that is expected to address global environmental challenges.
