Abstract

The integration of insects and insect-derived compounds into food formulations offers a sustainable approach to meet rising global protein demand. This chapter provides an in-depth examination of the various aspects of insect-based foods, including species diversity, nutritional profiles, safety assessments, and functional properties. Insects are known for their substantial nutritional benefits, offering high levels of proteins, lipids, and essential micronutrients, which make them valuable dietary supplements. Addressing safety concerns through rigorous assessments is essential for building consumer trust and ensuring regulatory compliance. The functional properties of insect ingredients such as their emulsifying and gelling capabilities enhance their utility in diverse culinary applications. Emerging innovative recipes and techniques aim to normalize the consumption of insect-based foods, whereas consumer perceptions and acceptance remain crucial for widespread adoption. Educational initiatives and positive culinary experiences are necessary to shift public attitudes favorably. Sustainable sourcing practices, including ethical farming and harvesting, highlight the environmental advantages of insect-based food production. Future directions indicate the expanding role of insects in global food security, fueled by ongoing research and innovation. This chapter emphasizes the significant potential of insects to contribute to resilient and sustainable food systems, highlighting their ability to become mainstream dietary components. Through sustainable sourcing, regulatory adaptation, and consumer education, insects can play a pivotal role in addressing global food challenges and securing a sustainable future.
