Technological Advances in Insect-Derived Food Ingredients
Abstract
Insect-derived ingredients have emerged as promising options for food production. The current status and use primarily involve whole-insect powders and extracted proteins and lipids obtained mainly through mechanical processing, enzymatic hydrolysis, and solvent-based extractions. Advanced techniques such as high-pressure processing and pulsed electric fields are being investigated toward improving bioavailability, digestibility, and techno-functional properties of these ingredients. The incorporation of these ingredients has already been studied in various food matrices, including primarily bakery products, meat products, and dairy analogs, with promising results. The nutritional diversity of insect-derived ingredients could be expanded beyond protein and fat content, considering components such as chitin, omega-3 fatty acids, and bioactive peptides. Methodologies such as protein sequencing, metabolomics, and combined processing techniques such as enzymatic hydrolysis, ultrasound-assisted extraction, and microencapsulation could enhance the stability, bioavailability, and nutrient profile of these ingredients, broadening their technological applicability in food formulations. The industrial production to obtain them currently faces technological challenges, including efficiency in extraction methods and scaling up. Present methods in the edible insect industry are labor-intensive and could be further optimized. Innovations in biotechnology, automation, and artificial intelligence-driven smart farming systems could improve insect rearing efficiency, ensuring stable and high-volume production. Additionally, expanding the diversity of farmed insect species beyond the commonly studied ones (e.g., mealworms, crickets, and locusts) could present new opportunities for diversifying the nutritional and functional profiles of insect-derived ingredients. Integrating the production of insect-derived ingredients within circular economy frameworks presents a transformative opportunity for waste valorization and resource-efficient feed production, further enhancing the environmental and economic sustainability of these ingredients. Advances in storage stability and packaging technologies are crucial to ensuring the long-term quality, safety, and marketability of insect-containing final food products. By leveraging interdisciplinary technological advancements, insect-derived ingredients can transition from niche applications to mainstream food systems, contributing to a more resilient, sustainable, and nutritionally enriched global food supply.
