Valorization of Beetroot and Its Waste: An Unexplored Potential
Abstract
Beetroot ( Beta vulgaris ) has been widely recognized and utilized as a natural food colorant due to the presence of water-soluble, nitrogen-containing pigments known as betalains , which impart its characteristic vibrant red-purple hue. Beyond its coloring properties, beetroot serves as a rich source of essential nutrients, including significant amounts of antioxidants and phenolic compounds. Recent scientific studies have highlighted the promising physiological benefits of beetroot consumption, such as improvements in liver function and protective effects against hypertension, cardiovascular diseases, and certain cancers. This chapter provides comprehensive insights into the potential of beetroot as a multifunctional and innovative ingredient in various food applications. It explores the phytochemical diversity of beetroot, emphasizing its role as a valuable reservoir of nutraceutical compounds and its incorporation into functional food formulations. Special attention is given to the impact of different beetroot fractions when used as fortifying agents in food products, demonstrating their broad utility and health-promoting properties. Overall, this chapter serves as a detailed and up-to-date resource for researchers and professionals in the food and health sectors, bridging the gap between beetroot’s chemical composition, functional properties, and therapeutic applications.
