Abstract

Litchi ( Litchi chinensis ) seeds are often discarded as agricultural waste which contains a significant amount of starch with promising functional properties for various applications. This chapter explores the extraction, characterization, and potential utilization of litchi seed starch in food and bioplastics film development. Review of physicochemical analyses reveals its unique gelatinization behavior, water-holding capacity, and film-forming properties, making it a viable alternative to conventional starch sources. In food applications, litchi seed starch enhances texture, stability, and shelf life, while in bioplastics, it can contribute to the production of biodegradable and eco-friendly films with competitive mechanical and barrier properties. The incorporation of plasticizers and bioactive compounds can improve film flexibility and functionality, providing a sustainable alternative to petroleum-based plastics. Valorizing litchi seed waste can promote environmental sustainability and resource efficiency while paving the way for innovative food packaging solutions and functional food ingredient development.
