Abstract

This chapter introduces the reader to toxicological issues associated with residues of various classes of synthetic pesticides in the environment and in several foods. These are, first of all, different insecticides, starting with DDT, continuing with more toxic organophosphorus compounds and carbamates, as well as herbicides and fungicides. The toxicity of the widely used herbicide glyphosate can depend on the composition of the soil that determines the breakdown rate of glyphosate. It is not possible to feed mankind without the use of pesticides, but a golden middle should be found.
