Abstract

This chapter provides a brief overview of modern analytical (bio)chemistry methods used for the detection, identification, and quantification of various toxic substances and their metabolites in environmental (soil, water, air, plants), feed, and food samples. Analytical toxicology also deals with the analysis of samples of various body liquids and organs (blood, liver, kidneys, urine, stomach contents, and so forth). Nowadays food safety has become one of the focus topics worldwide. The main problems are the illegal addition of additives and chemical contaminants. Because of the advantages of high-resolution mass spectrometry (HRMS), the combination of liquid chromatography (LC) with HRMS has been increasingly used in food safety analysis ( Fu et al., 2017 ).
