Vitamin-Mineral Premix
Abstract
Vitamin-mineral premixes (VMPs) are an integral part of food fortification that can address deficiencies of certain micronutrients like iron, folic acid, vitamin B 12 , and so on, particularly in vulnerable populations. They consist of precise measurements and mixtures of ingredients such as vitamins, minerals, preservatives, and carriers that can be added to diverse staple foods. During formulation and processing, careful selection of ingredients is a key aspect that can affect bioavailability, stability, and compatibility. Additionally, key unit operations like micronization, precise weighing, uniform mixing, and packaging play a major role in maintaining stability and transforming ingredients into the desired quality of VMPs. Meanwhile, to produce safe and high-quality VMPs, one should strictly adhere to control measures and quality assurance through the implementation of Good Manufacturing Practices, Good Hygiene Practices, and Hazard Analysis Critical Control Point protocol. With the increase in global demand for VMPs, certain emerging innovations like microencapsulation and advanced automation are continuously enhancing the efficacy, shelf life, and bioavailability of the nutrients. Considering the integral part of the fortification, this chapter extensively addresses the ingredients, formulation principles, processing technologies, and QA/QC protocols for the safe production of VMPs. This systematic approach to VMP formulation, processing, and quality management will contribute to the sustainable production of nutrition and mitigate or prevent hidden micronutrient deficiencies.
