Abstract

Rice pulverization is a crucial process that produces finer particles rice flour from rice grains. It plays a major role in producing rice flour for specialized purposes like fortification of rice kernels, which is used to reduce the micronutrient deficiency. This chapter describes a comprehensive overview of rice pulverization, starting with how it differs from other milling methods and benefits of using pulverized rice flour. Unlike other basic milling, it provides flour with ultra fine particles with better properties which improve the functional, textural, and nutritional stability of fortified rice kernels. This chapter describes the basic and scientific principles of the pulverization process including the types of mechanical forces such as impact, shear, and compression that work on the rice grains during grinding. Types of milling methods like dry milling or wet milling and their working principle vary the flour properties, which affect final products. Wet milling of rice pulverization provides fine rice flour with better functional and rheological property, which is used for manufacturing of fortified rice kernels. It also introduces the traditional and modern methods and equipment such as hammer mills, roller mills, jet mills, and cryogenic grinding of rice grinding and its effect on the flour properties. Rice pulverization can be making more efficient and by using Artificial Intelligence and Machine learning (AI-ML) for optimizing the process parameters.
