Abstract

Organoleptic assessment is the process of judging food based on our five senses: sight, smell, taste, touch, and sound. These senses help us decide if we like a food or not. For example, we might be drawn to the bright colour of a fruit (sight), enjoy its nice smell (smell), like how it tastes (taste), feel its texture (touch), or hear it crunch when we bite into it (sound). Each of these senses affects how much we enjoy a food, especially when it comes to brain-boosting foods that are good for improving brain function. Therefore, in this chapter, the various organoleptic assessment that are involved in evaluating the brain foods are described in detail.
