Abstract

This study examined how applying communication strategies impacts the performance of paiche fillet processing in Ucayali. Digital platforms and face-to-face training were implemented, resulting in statistically significant increases in processing performance. The average yield of skinless fillets increased from 35% (SD = 4.2) to 42% (SD = 3.8), with a significant difference (t(58) = 4.23, p < 0.001). For skin-on fillets, yield increased from 45% (SD = 3.9) to 52% (SD = 4.1), also with a significant difference (t(58) = 3.88, p < 0.001). The differences in yield between males and females were minimal, but larger fish showed superior yield. These results highlight the effectiveness of communication interventions in improving filleting efficiency, which reduced waste and increased profitability in aquaculture production in the Amazon region.
