Abstract

The aim of this study was to characterize Creole donkey milk through physicochemical analysis (fat, protein, lactose, total solids, density, and pH), fat globule size, and alcohol stability. The milk was characterized by a high lactose content (6.43%), lower fat content (0.19%), lower protein content (1.3%), and lower total solids content (9.12%), unlike cow’s milk. Furthermore, all samples showed stability at 70% (v/v) alcohol. The average fat globule diameter in donkey milk (2.51 μm) was smaller than that of cow’s milk (3.69 μm). The characteristics of donkey milk reported in this study make it a functional and alternative food for production in Latin America.
