Las Redes Alimentarias Sostenibles en Castilla y León: configuración y límites en un contexto de baja densidad urbana
Abstract
Sustainable Food Networks (SFN) are defined as initiatives that promote agrifood chains restructured under ethical, political, health, and sustainable criteria. This article analyzes the profiles of SFNs in Castilla y León (Spain), the operational models they adopt, and their territorial distribution patterns. With these objectives, a sample of representative initiatives was interviewed based on the SFN inventory of the region. The results show a strong foundation of small-scale production and transformation networks oriented towards urban markets, and the predominance of operational models where interaction mainly occurs through the act of purchase. Additionally, an interpretative framework of location factors for SFNs is proposed. It is concluded that the socio-territorial characteristics of the region favor the operation of highly diversified, small-scale sustainable food initiatives, while conditioning the minority representation of dense networks and active operational models.
