Abstract

Flour confectionery products (FCP), including gingerbread, play a vital role in the modern diet, making it promising to develop new FCPs with improved chemical composition and high consumer properties. This article examines the enrichment of dough with bean fl our and the use of bean paste as a gingerbread fi lling. The study included model samples of choux pastry gingerbread dough with the addition of 10, 15, and 20% bean fl our in place of some wheat fl our, semi-fi nished products, and fi nished choux pastry gingerbread. Control samples were prepared using a traditional recipe for choux pastry with sugar and honey. It was found that the addition of bean fl our reduced the dough’s water absorption capacity, its formation time, and its stability. Increasing the bean fl our addition from 10 to 20% resulted in a 9,26% increase in overall dough deformation, a 22,23% increase in plastic deformation, and a 22,11% decrease in elastic deformation, which correlated with the organoleptic properties of the fi nished gingerbread. The optimal amount of bean fl our for enriching gingerbread was determined to be 10%; further increases resulted in unacceptable changes in the structure of the fi nished product. A technology for preparing choux pastry with bean fi lling was refi ned, ensuring the formation of high quality indicators. In the developed gingerbread with bean paste, the protein content increased by 60%, and the fat content decreased by 42,22% compared to the control. The feasibility of storing choux pastry with bean paste for up to 72 hours at a temperature 6–8°C was substantiated. The results of this study are promising for the development of effective technological solutions for the use of processed grain bean products in the production of specialized bakery products, which will reduce production costs and dependence on suppliers of imported ingredients.
