Abstract
During expert research on the quality of food products, many problems arise due to the fact that most standardized methods require a lot of time to conduct research, require expensive equipment and chemical reagents, and involve experienced specialists. The article identifies innovative express methods as electronic nose (e-nose) and electronic tongue (e-tongue) technologies that provide automated, objective, and rapid assessment, making them very important and indispensable during expert research of food products.Е-nose and e-tongue areanalytical devices that mimic the biological organs of smell and taste, using arrays of sensors to detect chemicals. It was found that e-nose and e-tongue technologies are most often used during research important for food products: determining quality and safety indicators; for monitoring technological processes and for the purpose of detecting falsification. It was concluded that assessing the freshness of products and detecting the first signs of deterioration based on the analysis of volatile organic compound profiles is a priority. This is especially true for perishable products such as meat, fish, and seafood. Also, e-nose and e-tongue are used to determine the degree of ripeness of fresh fruits and vegetables, determine the region of origin and production of grape wines, tea and coffee. These methods easily detect pesticide and other chemical residues in fruits and vegetables. They also detect volatile markers associated with bacterial growth.Electronic tongue used for taste profiling and standardization. It has been found that e-nose and etongue are often used in authenticity tests for such food groups as dairy and meat products, fruits and vegetables, various oils, tea and coffee, and soft and alcoholic beverages. It is concluded that the technologies of the e-nose and e-tongue have been constantly improved in recent years. The basis for this is the development of sensor technologies and artificial intelligence.
