Abstract

The production of edible cultivated mushrooms is one of the promising directions in the agro-industrial sector of the Russian Federation regarding scientific and technological development of agriculture and ensuring food security. The most popular and accessible edible cultivated mushrooms for Russian consumers are those of the species Agaricus bisporus (basidiomycete mushroom). One of the key issues concerning the realization of fresh champignons and other edible cultivated mushrooms is maintaining their marketable and consumer properties at different stages of distribution. This article examines classification characteristics of fresh champignons purchased from retail grocery stores in Moscow and presents an assessment of their quality according to technical requirements specified by State Standard GOST 34958-2023.
