Abstract

Artificial intelligence is increasingly used in food distribution for demand forecasting, logistics, inventory management, pricing, labor scheduling, and food waste reduction. Operating within strict food safety, labor, data protection, competition, and sustainability regulations, the sector is shaped not only in AI deployment but also in system design, governance, and implementation. This chapter examines how regulatory frameworks influence AI development in food distribution, focusing on governance, accountability, and public-interest concerns. It analyzes how legal obligations affect data use, transparency, human oversight, and risk management, and addresses liability in AI-driven supply chains where algorithmic decisions contribute to shortages, waste, pricing distortions, or unequal food access. By framing food distribution as a critical yet underexamined area of AI regulation, the chapter bridges legal analysis with practical system development.
