Abstract

Dr. MB (Marybeth) Mitcham is an Assistant Professor and the Director of the Online Master of Public Health (MPH) Program at George Mason University, in the first College of Public Health in Virginia. Additionally, she is an affiliated faculty member of the Virginia Climate Center and a Fellow of the third cohort of the Culture of Health Leadership Institute for Racial Healing. Mitcham’s research and work are centered on the interplay between humans and their environment, leveraging education to achieve better community health outcomes, and exploring intergenerational and interdisciplinary approaches to foster personal connectedness through storytelling and open conversations. Her research interests include social justice-focused nutrition and wellness initiatives, with an emphasis on rural and American Indian/Alaska Native elder populations, using a Lifestyle Medicine (Food as Medicine) approach. Her primary research methodology includes mixed methods and qualitative designs, emphasizing community participatory-based research. In her free time, you can likely find her on a mountain, munching on eggplant bacon (not sharing it with her dog, who instead has her own version of bacon), happily gazing at cairns.
