The Gastronomic Discourse and Seriality Forms
Abstract
The gastronomic discourse is subject to the dialectic between repetition and innovation, whether it is the food of silent tradition or that of industry. So, for it, seriality is the norm, punctuated by peaks of individual creativity. There are no gastronomic models without their transgressions; and every inventive act stands out against the background of constant, reiterated practices and principles. Having made these premises, this article will focus on theoretical and methodological issues related to the ways in which this dialectic is extrinsic, that is, manifests itself in gastronomic texts, and as such can be reconstructed in semiotic analysis.
