Abstract

Artificial Intelligence (AI) is transforming the food service sector by providing advanced solutions for inventory management, demand forecasting, and portion size control, significantly reducing food waste. However, the successful implementation of AI-driven systems depends on the level of trust that restaurant managers, chefs, and consumers place in these technologies. Based on a literature review and quantitative research conducted as part of the Erasmus+ FoodConscious project, key aspects of trust in these technologies among representatives of the food service sector have been presented. This chapter examines the role of trust in AI adoption, emphasizing the importance of algorithm transparency, data security, and ethical considerations. It also explores how AI enhances decision-making processes, optimizes supply chains, and supports sustainability efforts in the food industry. By fostering confidence in AI technologies through user-friendly interfaces, explainable algorithms, and proven efficiency, businesses can maximize the benefits of AI, leading to cost savings, improved resource management, and a more environmentally responsible approach to the food service sector.
