Abstract
The article is devoted to studying the influence of corn composition on the characteristics of semi-finished and finished products. Data on corn use standards in the world are presented: in Russia — up to 20%, in Europe — 10–30%, in the USA and Australia — 40–50% and more, in Africa — 50–75%. Comparative data on the structure of barley and corn are provided for a better understanding of biotechnological processes when using corn. A higher temperature of starch gelatinization in corn, the features of its structure, formation, the individual ratio of amylose and amylopectin and the influence of this fact on mashing modes are noted. The presence and structure of non-starch polysaccharides are considered. The authors cite their influence on the process of preparing finished products. The main fractions of nitrogenous compounds of corn and their structural features, as well as the effect on the composition of the wort are considered. A deficiency of the foam-forming protein LTP 1 in the composition of corn is noted. The authors explore the presence of a lipid fraction and its impact on the functional value of finished products. They present the composition of phenolic compounds in different corn varieties and their impact on the colloidal structure of brewed products. They demonstrate that corn is rich in vitamins C, E, K, B1, B2, B3, B5, folate, the minerals selenium, potassium, Np-coumaryltryptamine, and N-ferulyltryptamine, as well as mineral compounds such as nitrogen, phosphorus, potassium, magnesium, iron, manganese, zinc, and copper. Compounds that contribute to the unique flavors of corn in brewed products are also discussed.
