Abstract

The aim of the study is to identify the effect of modifying the composition of marinades for semi-finished poultry meat products by replacing traditional vinegar with fruit juices (lemon, kiwi and pineapple), as well as to determine the effect of brine recipes, replacing water with fermented milk drinks (kefir, ayran and kumis). At the first stage, the objects of the study were various types of shashlik, differing in the composition of the marinade, in which water was replaced with kefir, ayran and kumis. A comprehensive analysis of the organoleptic properties showed that the best characteristics were possessed by shashlik aged in ayran-based marinade, which was taken as the basis for further analysis. At the second stage, organoleptic indicators of shashlik aged in ayran-based brine with vinegar replaced in the recipe with lemon, kiwi or pineapple juice were determined. The data obtained showed that in terms of smell and taste, the shashlik sample with kiwi juice was the best, due to the absence of foreign smell and aftertaste of the fruit itself. Shashlik with vinegar replaced with kiwi or pineapple juice turned out to be more tender, but with longer aging in brine, the consistency of the shashlik became less dense. The indicators of moisture binding and moisture holding capacity of shashlik with the use of ayran and kiwi juice grow more intensively, and the final indicators are higher compared to the control sample. According to the results of 12-hour exposure, the moisture-binding capacity of the control sample was 75.6 %, and that of the shashlik samples of the experimental groups was 77.4–77.8 %; according to the moisture-holding capacity indicator, the control sample was 69.9 %, and that of the shashlik samples of the experimental groups was 71.6–72.3 %. Consequently, the use of ayran and kiwi juice in the brine recipe had a positive effect on the functional and technological properties.
