Abstract

Edible lichens are regional sources of biologically active micronutrients of plant origin (phytonutrients). For centuries, they were used to not only ethnic food products but in traditional medicine of the peoples of the Far North, what reflected in the domestic pharmacopoeia. The pharmacological and nutritional properties of edible lichens, substantiated by the results of many scientific works, allow us to consider them as promising raw materials for the development of not only standardized medicinal herbal preparations, but also functional food products. In order to expand the range of food products, including Cetraria islandica (L.) Ach., the authors studied the functional and technological properties of the lichen as a promising recipe ingredient for bakery products. Taking into account the presence of bitter-tasting compounds and gelling properties of edible lichens the authors proposed a technology for the primary processing of Icelandic moss. As a result, it was possible to remove the natural astringency and bitterness from the product, and also to obtain a gel-like semi-finished product suitable for universal use in the technology of food products of a wide range and purpose.el semi-finished product has high stability, retains its structural and mechanical properties after freezing and is easy to dose. There are effect of adding a gel semi-finished product (17, 25 and 30 % of the liquid phase weight) to straight yeast dough from peeled and premium wheat flour studied. The using of the gel semi-finished product reduces the final proofing time of dough pieces by almost 1.5 times, while the quality of finished products meets the requirements of regulatory documentation. The obtained results confirm the potential of using a gel semi-finished product made from Icelandic moss in bakery technology, which contributes to the creation of new functional products for the Arctic regions with increased nutritional value.
