Abstract

This review examines current literature on microbial consortia of lactic acid bacteria (LAB) and their role in the creation and modification of fermented milk products, including functional ones. The relevance of this research lies in the search for and selection of new microbial strains for the development of microbial associations with improved technological characteristics to meet the growing demand for specialized food products. The paper examines in detail the fundamental types of microbial interactions (mutualism, commensalism, competition, amensalism) in natural and artificial communities, as well as metabolic interactions such as nutrient cross-feeding. Using traditional products (kefir, kumiss, yogurt, velle dahi, and kombucha) as examples, the principles of forming stable consortia containing primarily LAB in combination with yeast and other microorganisms are analyzed. The properties of LAB strains in monoculture and in community with other microorganisms are examined, including biocompatibility, antagonistic activity, auxotrophy, and the ability to synthesize biologically active compounds. The section on the development of LAB consortia for the dairy industry and pharmaceuticals is devoted to aspects of community design tailored to the needs of the final product, in particular, the creation of probiotic compositions, protective cultures, and products with a specifically modified metabolome. The conclusion highlights key challenges, such as maintaining artificial consortia and the difficulties in predicting their properties, as well as promising research areas. This review is based on an analysis of the SCOPUS, Google Scholar, and Russian Science Citation Index (RSCI) databases. The beneficial properties of fermented milk products, as well as the growing consumer demand for products with functional and improved properties, are stimulating the search for new microbial associations using LAB for the development of fermented milk products.
