Factors influencing fermentation efficiency and product quality: A comprehensive review
Abstract
Fermentation is a fundamental biochemical process that underpins numerous applications in food production, agriculture, pharmaceuticals, environmental management, and industrial biotechnology. The efficiency of fermentation processes and the quality of the resulting products are governed by intricate interactions among microbial strains, substrate composition, physicochemical parameters, and process control strategies. Variability in these factors may significantly alter microbial growth dynamics, metabolic flux distribution, fermentation kinetics, and final product attributes such as flavor, aroma, texture, nutritional value, and safety. Microbial strain selection plays a decisive role, as genetic background, metabolic capacity, and stress tolerance determine substrate utilization efficiency and metabolite yield. Substrate characteristics, including carbon and nitrogen sources, micronutrient availability, and the presence of inhibitory compounds, further influence fermentation performance. Environmental conditions such as temperature, pH, oxygen availability, and moisture regulate enzymatic activity and cellular physiology, shaping both efficiency and consistency. Technological interventions, including fermentation mode, bioreactor design, and real-time monitoring, have substantially improved process stability and scalability. However, suboptimal control of fermentation variables continues to result in incomplete fermentation, quality deterioration, and economic losses. This review provides an integrated synthesis of biological, physicochemical, and technological factors influencing fermentation efficiency and product quality, highlighting current advances, limitations, and future research directions.
