Fermentation and Flavor of Mahula (Madhuca indica) Wine
Abstract
The present invention relates to a traditional and optimized process for producing wine from Mahula (Madhuca indica) flowers, focusing on both fermentation efficiency and enhancement of unique flavor characteristics. The method involves selective collection of mature Mahula flowers, controlled enzymatic and microbial fermentation, and specific environmental conditions including temperature and pH regulation to maximize alcohol yield while preserving bioactive compounds responsible for aroma and taste. The process also includes natural clarification and maturation steps to develop a characteristic fruity, floral, and slightly caramelized flavor profile unique to Mahula wine. The invention addresses challenges in traditional fermentation methods, such as inconsistent alcohol content and off-flavors, by introducing a reproducible and scalable protocol suitable for small-scale and commercial production. The resulting Mahula wine not only maintains the nutritional and sensory attributes of the flowers but also demonstrates enhanced stability, shelf-life, and consumer acceptability, making it valuable for culinary, medicinal, and cultural applications.
