Abstract

Replicate-level raw laboratory and sensory data underlying the development and evaluation of ENDIP, a grain amaranth-based extruded instant porridge for the dietary management of moderate acute malnutrition in children under five. The dataset covers proximate composition of raw materials and of formulations F1 and F5; mineral composition (AAS); anti-nutrient content (tannin, oxalate, phytate) for raw ingredients, raw blends and extruded blends; water absorption capacity; bulk density with derived flow indices; and panelist-level 9-point hedonic sensory scores for six coded samples (n = 30). All analyses were conducted in triplicate. Analyses were performed at the Tanzania Food and Nutrition Centre (TFNC) Food Laboratory, Dar es Salaam, December 2025. Data relate to the manuscript submitted to Frontiers in Nutrition (ID 1895788).
