Fructose Metabolism as a Biochemical Pathway to Civilization Diseases
Abstract
Can the relationships between saccharose consumption and the prevalence of civilization diseases be explained on a particular biochemical basis? Civilization diseases are linked to human nutrition, particularly the year-round consumption of sucrose and glucose-fructose syrups. Here, we describe evidence of a biochemical link between chronic high fructose consumption and elevated blood triacylglycerol levels, high blood pressure, increased oxidative stress, and impairment of other biochemical markers. If these conditions persist over several years, they can lead to civilization diseases such as type 2 diabetes mellitus, hypertension, non-alcoholic fatty liver disease. These diseases are collectively known as metabolic syndrome.
