Abstract

Due to its unique biochemical structure and various bioactive components, quinoa (Chenopodium quinoa Willd.) is known as a nutrient-rich pseudograin with significant medicinal potential. Quinoa offers a wide range of phytochemicals, including flavonoids, phenolic acids, betalains, and saponins, in addition to high-quality proteins that comprise important minerals, vitamins, unsaturated fatty acids, all essential amino acids, and dietary fiber. These substances support its strong anti-inflammatory and antioxidant qualities. According to experimental data, quinoa-derived bioactives decrease lipid peroxidation, improve endogenous antioxidant defense systems by modifying the Nrf2 signaling pathway, and scavenge reactive oxygen species (ROS). Additionally, quinoa consumption has been linked to the suppression of pro-inflammatory cytokines such as TNF-α, IL-1β, and IL-6, partly due to its inhibition of NF-κB activation. Quinoa has positive metabolic effects in addition to its anti-inflammatory and antioxidative properties. Its low glycemic index and high fiber content contribute to improved glycemic control and insulin sensitivity. Consuming quinoa has also been associated with positive changes in lipid metabolism, such as lower levels of triglycerides, total cholesterol, and LDL cholesterol. Potential preventive roles against cardiovascular illnesses, non-alcoholic fatty liver disease, type 2 diabetes, and metabolic syndrome are suggested by emerging in vivo and clinical data. Quinoa is positioned as a promising functional food with therapeutic implications. More rigorously organized clinical trials are needed to better understand ideal intake levels, bioavailability of bioactive chemicals, and long-term health outcomes.
