Anthocyanes et chimie des couleurs dans le monde végétal
Abstract
(Text in French) Anthocyanins and the chemistry of plant colors. Plants have developed original strategies to diversify and stabilize the color of anthocyanins, one of the main classes of pigments: pi-stacking of phenolic nuclei, metal binding, evolution toward new derivatives. These mechanisms are discussed through selected striking examples.
