Abstract

Chiapas cuisine was recognized as a complex cultural expression that articulated territory, identity, and social practices, and it was analyzed as intangible cultural heritage through its symbolic and gastronomic referents. This article aimed to systematize academic and documentary literature on Chiapas cuisine in order to identify the main thematic cores explaining its heritage configuration. A systematic review was conducted following PRISMA guidelines. Scopus, Web of Science, Google Scholar, SciELO, Latindex, and Redalyc were consulted. The search retrieved 1,250 records; after removing duplicates (n=340), 910 titles and abstracts were screened. Then, 850 records were excluded due to limited thematic relevance or incomplete access. Sixty full texts were assessed and a final sample of 47 articles was included. Information was organized through a data-extraction matrix and a qualitative synthesis structured into two axes: (1) cultural and symbolic referents, highlighting heritage, rituality, memory, intergenerational transmission, and the role of traditional cooks; and (2) gastronomic and territorial referents, emphasizing local ingredients, biodiversity, traditional techniques, markets, and supply networks. Findings indicated that research on Chiapas cuisine remained scarce and scattered; therefore, this review provided an organized basis for future research in gastronomy and social sciences and for citation in academic training and cultural food studies.
