Abstract

This dataset provides per-100g estimates of environmental impacts and costs for all items in the 2022 UK Nutrient Databank (NDB), derived from foodDB (https://doi.org/10.1073/pnas.2120584119). Impact estimates include greenhouse gas emissions (kgCO2e/100g), land use (m²/100g), water use (litres/100g), and eutrophication (gPO4e/100g). Values for each NDB item are calculated by averaging the impacts and costs of all foodDB items mapped to it via a one-to-many mapping. The specific matching methodology will be detailed in a forthcoming paper, which will be linked here upon publication. Because foodDB accounts for varied production systems there is a distribution of impacts for each ingredient. Two point estimates of the impact are provided for each NDB item: the average of the mean impacts (mean_X) and the average of the median impacts (median_X) of the matched foodDB items, along with their respective standard deviations. Since environmental impacts per 100g are typically right-skewed, we recommend using the median estimates for primary analyses and the mean estimates for sensitivity analyses. The standard NDB food code is included under the column Food composition record ID to facilitate easy integration with existing NDB-based dietary datasets.
