Biochemische Charakterisierung neuer bakterieller Enzyme für den Abbau von Xanthangummi
Abstract
This study investigates the enzymatic degradation of xanthan by two novel bacterial strains belonging to the taxa Cohnella sp. and Paenibacillus taichungensis. Genomic, proteomic and enzyme activity analyses revealed several xanthan-degrading enzymes. A novel carbohydrate-binding module with binding specificity for xanthan lyase-digested xanthan was identified as part of a xanthanase. These results have potential for industrial applications in xanthan modification and oligosaccharide production.
